Where You Can Have A Healthier Sausage
Cherry Tomato and Sausage Bake
Ingredients:
3 to 4 1/2 lb (1.4 to 2 kg) ripe cherry tomatoes
2 sprigs fresh thyme
2 sprigs fresh rosemary
2 bay leaves
2 red onions, quartered
3 cloves garlic, roughly chopped
10 to 12 good-quality British sausages
extra virgin olive oil
balsamic vinegar
sea salt and freshly ground black pepper
Directions:
Preheat the oven to 375°F (190°C).
Place the tomatoes, herbs, onions, garlic and sausages in a large roasting tray or casserole dish, one that fits the
tomatoes in one layer.
Drizzle with extra virgin olive oil and balsamic vinegar and season with salt and pepper, the sausages should be the
top layer. Roast in the oven for 30 minutes, then give the tray a shake and turn the sausages over. Continue
cooking for 15 to 30 minutes more, depending on how golden you like your sausages.
If you think the sauce is a little too thin once the sausages are done, lift them out and place the tray on the stovetop
to cook it down to the consistency you like, then put the sausages back in. Check the seasoning.
